Blade material
Every Wüsthof Epicure blade is fully forged from high carbon X50CrMov15 stainless steel, expertly heat treated using Wüsthof’s proprietary processes and forging techniques. This ensures optimal hardness, durability, edge retention, corrosion resistance and consistency.
Blades and forging
All knives in the Wüsthof Epicure series are precision forged and shaped from a single piece of steel to guarantee optimal performance. All Epicure knives have a full-tang construction, meaning the blade extends all the way through the handle. This enhances stability, strength and balance.

Edge
All Wüsthof’s knives are meticulously ground and sharpened using exact specifications, both by machine and by hand, rendering the edge not just razor-sharp but also easy to maintain with a honing steel or leather strop. When sharpening is needed, we recommend to use a whetstone for optimal results.
Handles
The most eye-catching feature of the Wüsthof Epicure line is the innovative and supremely comfortable handle material, which is crafted from a combination of sustainable natural wood fibers out of recycled paper and a specially developed resin. This material has a wood feel, but has a few key advantages, most notably its strength and compactness. The fact that it’s non-porous means it’s extremely hygienic, moisture resistant and wear resistant, with a warm and inviting non-slip grip.
The handles of the Epicure knives are ergonomically shaped to fit comfortably into the palm of the hand. This design reduces fatigue during prolonged use and promotes a natural cutting motion.
The handles are securely attached to the blade using three rivets for longevity and durability of the knives, as the handle will remain firmly in place over time. Both handles and rivets receive a smooth, unifying finishing polish.
Design
The Wüsthof Epicure series has a sleek, modern appearance with a smooth transition from the blade to the handle. Besides the slate-colored handles, select blades are also available featuring brown handles, completing this aesthetic marvel.
